Mini Present Cake!

My sister called and told me she was going to a friends for dinner this weekend and was in charge of the dessert.  She asked if I could make a small present cake for the six of them.

This cake is a 3 layer 4in cake.  She chose to do white, chocolate, white with buttercream icing.  It was fun because she let me have full control over the design and colors.  This cake would be perfect for a small dinner party, a first birthday smash cake (make it 2 layer), or just fun for a surprise for a friend.

Baby Zachary's Sip N See

Here are some fun Cupcakes with fondant accents that will be at the Sip n See.

They are a white almond cupcake with a buttercream icing.  Yum!

My Birthday Cake!

Well, I had a wonderful birthday weekend and had such a relaxing time.  My parents kept the kiddos and I got a quiet weekend with my wonderful sweet husband.  It was so nice.  I did, however, get to make my birthday cake.  I did a three layer cake.  It was white, chocolate, white with a vanilla buttercream between the middle layers and covered in a rich chocolate buttercream icing.  Yum! Yum!

Samantha's B-Day Cake continued....

Here is the picture of Samantha's B-Day cake...  I also made a few petits fours!

The Love Bug.  (Also Cute for Kids Birthday Parties)

Samanthas Bday Cake

Well,  It definitely all came together in the end.  She asked for a pink and chocolate cake with chocolate icing.  The bottom layer of the 2 layer cake was a German chocolate base with chocolate chip chunks mixed in.  The top layer was strawberry (pink).  I put a chocolate fudge filling between the layers, and on top of that a strawberry filling.  Finally, it was iced with a chocolate butter cream icing,  I decorated it with more chocolate butter cream polka dots and a big bow made out of ribbon on top.  It was beautiful and delicious.  This cake is definitely not one of our low cal recipes...  I will post pics soon.  Happy Birthday Baby Girl!

The new year...

Well I guess it is obvious that it is the begining of the year since most of our recipe post are low cal!!!!  We do like to cook fattening things, but while we are all still on our new years resolution diets here is a low cal fun yummy idea.
Mix the following....
1C fat free yogurt
1can rotel with green chilis
minced cilantro
1t cumin
I had it on top of tamales in place of sour cream and cheese.  It was actually delicious...I thought it was better than sour cream, and so much lighter!  Next I am going to put it on a Baked Potato!

Next up Samantha's B-Day cake!  She wants chocolate and pink with chocolate icing...It will not be low cal!

Cooking Light Ideas!

From Our Kitchen to Yours...

So I put a roast in the crock pot, along with mushrooms, fingerling potatoes and onions, and it is already smelling amazing!  I got this recipe out of the Fresh Food Fast Cooking Light Cookbook.  If you are in a pinch for time and want something healthy and tasty, you definately need this cookbook!  Most recipes use 5 ingredients or less and are made in 15 min.  You do have to somewhat prepare because most ingreadients are fresh and maybe not in the pantry.

When my mom, the dietition, first got me this book, I was skeptical.  How could 5 ingredient, healthy dishes pass the husband test?  So, of course being sneaky, I did not inform him of the "health factor" of the new dinners that I was making.  Most of them were a total homerun and they were delicious and good for us!  Of course a few were total busts, but you'll get that in any cookbook.

So, with the new year and all of our resolutions, try out this cookbook and I think you will love it!  We do!  Can't wait for dinner tonight.

Have a happy day
